My New, Easy Dinner Obsession!
Have I told you that I’m married to a carnivore? And that I am not a carnivore? This presents a problem at dinnertime. While I’m not a vegetarian, I just stray away from eating a lot of red meat (frankly, I don’t care for it much), and opt for fish, chicken and vegetarian options.
The other night, when I was making carne asada tacos for the men (hubby and two little boys—the baby doesn’t eat real food yet!), I got this random idea to saute up two diced sweet potatoes. I added a tablespoon of maple syrup (to bring out the natural sweetness), a tiny drizzle of olive oil, a teaspoon of kosher salt (to make it a bit more savory) and here’s the kicker: a half teaspoon of red pepper flakes.
When the sweet potatoes were soft, I scooped them into a tortilla and topped with shredded cheese (a Mexican blend). The result? Amazing! You have to try this yummy idea. You will love it!

I love to make sweet potato burritos. My favorite way to make them is to mash the sweet potatoes and sprinkle on some black beans, a spoon of salsa, then top with cheese. It makes a good enchilada filling as well.

Wow! I’ll have to try this. Sounds yummy. I’m with you I enjoy chicken breast, salmon, tilapia, shrimps, crab meat, fruits and veggies.

I share your quick dinner passion (if I have to cook, that is) … my favorite 10 (-ish) minute dinner is “taco salad” – I use Romaine lettuce, top with black beans (drained and rinsed), chopped tomato, shredded cheddar cheese, browned ground turkey for my carnivore (with a taco seasoning packet) and served with gluten-free tortilla chips. Dressing is either olive oil with a touch of organic apple cider vinegar or Ranch dressing with some hot sauce added (to taste). Can also add left-over corn or frozen/thawed corn, olives, red peppers, what ever veggies you love. My kids loved it, too … enjoy!
